ReplyDeleteI have what may be 2 stupid questions. Why do you leave the bottom to the legs on after you have sectioned off the deer? Couldn't you cut that off to manage the flying fur?
Why no water on the outside of the carcass? I was unclear as to why and when water in OK for the inside of the carcass as well.

I leave the hind quarters intact only for simplicity. Several less cuts. I've done it for so many years, I've just taken that short cut. I am very careful to not touch anything to the tarsal gland, including knives, hands, other meat, etc.
The only time I wash the interior of a deer is if I get ANY foreign matter, debris, bodily fluids, ie, gut material, urine, defecation, or if there's a lot of blood inside, in the cavity with the meat. In that case, I rinse out as well as possible, hang by the head or antlers, so the matter can flow out the bottom of the deer. Moisture breeds bacteria. If it's a clean kill and field dressing, you can wash your meat after it's in more manageable sections.
